The satay here is done in the traditional way, perfectly grilled, leaving the meat tender but with a gentle smokiness and just a hint if charting on the edges. The sour-sweet-spicy sauce is just the right accompaniment to the meat; it has plenty of mashed pineapple in it – gives it the right balance of sweet and sour, enhancing the peanut sauce. Only it’s a little healthier because there is less fat in the pork satay.
